Here's one great recipe for you to try:
Salsa Smashed Potatoes - a simple side dish
2- Baking or Chef Potatoes ( avg. size )
1/2 cup Salsa Loca (mild, just right, or hot)- you decide
1 1/2 Tbsp. Butter-unsalted
pinch or two of sea salt
Shedded Colby Cheese
Method: Wash and cut potatoes into large bite size chunks
and boil with water in medium size sauce pot.
Boil potatoes until soft, NOT MUSHY.
Drain water, add potatoes, salt, butter, salsa, into pot.
Mash with large fork over low heat until desired consistency,
add shredded cheese and cover until cheese is melted.
Serve hot.
